Salmon is a quick and easy go to meal. I typically pull salmon with an internal temp of 145*, just as it begins to flake. My kids like it more well done, probably aroun 165*. If you find a bigger cut, you can please everyone with the well done edges and the medium center section.
Ingredient List:
- 2 to 2-1/2 pound salmon fillet
- 1/4 C Brown Sugar
- 4T Old Bay
- Fresh ground black pepper to taste
- Sesame Oil
- 1 pat of butter
Instructions:
- Prepare medium hot griddle.
- Meanwhile, combine brown sugar, Old Bay, and black pepper.
- Rub evenly onto salmon fillet.
- Oil griddle with ~1T sesame oil and cook salmon for ~10 minutes
- Pro Tip: Add water and cover as necessary to steam cook the top of salmon filet
- Finish with a pat of butter and pull salmon at an internal temp of 145*, just as it begins to flake.
